The summer heat at Catherine Vale sees growth and development continue apace. Verasion sess the grapes begin to ripen and change colour and before we know it we are measuring sugar levels and sending samples to the winery for assessment. As soon as we have the optimum balance of sugar, pH and acid in each variety it can be harvested. Catherine Vale still hand harvests and this is a busy time hiring pickers, keeping the birds at bay and watching the weather. Rain and humidity at this time can endanger the crop and vigilance, the correct decision making, combined with swift execution of the harvest make this a worrying time. Relief and satisfaction comes as each variety is delivered safe and sound to the winery.
